Trick or Treat.....DA DA DA....Weighing Wednesday

Happy Halloween!

Happy Halloween

So my damn scale decided to take the Trick part on this Halloween instead of the Treat part!!!


I was only up .4 but it is still hard to see the number go up instead of going down.  I am so close to my 5% goal for Weight Watchers!! I knew that this weekend played Havoc over my eating and knew that is was most likely to make the scale go up.  

So here is to a new week and a new month! 

I have printed out my November workout regiment and plan on sticking to it and getting my sticker everyday!


I am ready to rock this November!!

Let's Rewind

So it was a calm and relaxing weekend at home...

What are you kidding me!! I have two boys and it was nothing but calm and relaxing at home.
Those boys were so crazy this weekend.
But I wouldn't want them any other way.

I got off work early on Friday and since my Momma had my boys, I decided to go to the gym for an hour.
I felt great and proud of myself for doing this (because it would of been so easy to just drive on home) and then when I picked up the boys, I pretty much got the "YOU ROCK MOM" from my oldest cause I rented him Madagascar 3!

Saturday we didn't do a whole lot but piddled around the house, laundry, watched some TV, read some books, the regular Saturday routine.

I finished Reflected in You by Sylvia Day (Crossfire #2) book and now I am going to patiently wait for the 3rd one!
If you need a good read and liked 50 Shades of Grey! This a awesome series too!

I baked a couple pies! Ugggh!!! I have a love/hate relationship with baking anything right now while trying to eat healthy and watch what I eat, but the Hubs wants something sweet and we had a church dinner. So I made an apple pie and a pumpkin pie.  Here is my recipe for the Crumble Apple Pie!

Crumble Apple Pie



Ingredients
Apple Pie Filling, Crisco Shortening, Salt, Flour and Water

Pie Crust 
(Recipe adapted from Betty Crocker)


1
cup Gold Medal® all-purpose flour
1/2
teaspoon salt
1/3
cup plus 1 tablespoon shortening
2
to 3 tablespoons cold water
Unbaked One-Crust Pie Crust: Mix flour and salt in medium bowl. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  1. Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
    Roll pastry, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch glass pie plate, or 3 inches larger than 10- or 11-inch tart pan. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked.





Apple Pie Filling
(I canned about 26 quarts this year)

Apple Pie Filling

14 cups apples peeled and sliced
2 cups cold water
1 1/2 TBS. lemon juice

6 TBS. cornstarch
1 1/2 tsp. cinnamon
4 cups sugar

Put 2 cups cold water in pan with the lemon juice, put in apples and heat the apples and stir them

Mix sugar, corn starch and cinnamon in a bowl. Then pour in with the apples and stir well until it starts to thicken. Put in jars. 5 lbs. pressure for 5 minutes. 

Makes 3 quarts



Oatmeal Crumble Topping
3/4 Cup Oatmeal (I use Quick Oats)
3/4 Cup Brown Sugar
3/4 Cup Flour
1/4 tsp. baking soda
1/4 tsp. baking powder
1/2 Cup Shortening

Mix in a pie with a pastry blender or a fork.  Then crumble on top of pie and bake in 350 degree oven for 45 minutes.

Hubs loves this pie and so do I! It is terrible to have around when you are trying to lose weight!

Hubs is so excited because some of it came home from Church!


Funniest Movie me and the Hubs have watched in a while! Absolutely hilarious and possibly one favorite one out of this group of movies!


On the fitness side of my weekend and eating healthy.....

Got it on with Jillian Michaels both Sat. and Sun. She rocked my world and I felt better after I was done with that workout! I am enjoying Ripped in 30 days and am on Week 1 Day 5.  The only issue I have is the lunges and side lunges.  They kill my knees.  So I just do not go as low as they do.  

On the eating front, I did horrible this weekend. Started off good on Saturday but when I baked the pies, of course I ate the pie crust (alot)! Then it just went down hill from there.  Sunday - church dinner was awesome but bad for the dieting person. I did on my main course, but then I went back for dessert.  I know I should of skipped but I stupidly could not resist!

Then we went to my in-laws for supper. Fried Chicken, mashed potatoes, gravy, green beans, rolls and cherry delight.  Of course I ate a little bit of everything! I did try to watch my portion but I have went over my WW point extra points for the week.  But I am going to let this week roll off my shoulders.  Weigh In is not until Wednesday and I am going to work my butt off these next few days.  If my scale stays the same that is better than going up and I do not want that to happen!

On the Parenting Side......

On a more serious parenting note:

Having children that are 4 years apart can at times be frustrating and at times great.  My oldest is 5 and was the only child for 4 years and really only grandchild for 2 year but the other grandchildren live at least 2 hours away.  To get to what I am trying to say, he is spoiled and has always been use to getting all the attention.  

Don't get me wrong he does good most of the time with his little brother but there are times where is gets jealous his little brother is getting the attention he is not.  

So he gets in your face...
He picks on his brother...
He throws little fits...
He depends too much on us...
He never wants his picture taken till his brother does and then he knocks him over or something...
He takes toys away that he never plays with...
And at times he just acts down right mean.

I know he is not the only child that does this but at times it is frustrating and I feel that I am to blame for this behavior.

Do I not give him enough attention?
Do I seem to favor the youngest over the oldest?
Do I get more frustrated with him?

I think I expect more from the Jacer because he is older.  He is in school, so we are harder on him regarding homework, bed time, reading, etc.  and at times forget he is only 5 and he is a boy! And Monkey is only 1 and still very dependable on Mama and Daddy.

I do not want either of my children to grow thinking that there Mama favored one over the other! I want them to grow up with the great and fond memories of me and their child hood! 

Don't get me wrong, Jacer is a great kid and we get along great there are just those times where I worry I am not doing something right with raising my kids.  But I know in the end, everything will turn out great!

Going to get more beef for our freezer! Whoo-HOO!

I hope to bake some healthy treats for me to snack on the next week
Maybe even bake an apple pie for the Hubs

Thinking about maybe seeing if we could have a date night one night.  We will see what we can do about a sitter and maybe have a few drinks.

Thinspiration Thursday



No! No! This is not me!

But someday I want to be able to be confident to be this person! To be able to walk around the gym home in this and be ok in it!

Have a picture taken of me and feel good about that picture and not be worried about how big I look.

Yes I am trying to lose weight!
Yes I want to be a MILF!
Yes I want to have more confidence in myself!

But this is not all that losing weight means to me.
It also means being healthy for my boys and able to keep up with them and not slow them down.
Showing them that it is important to take care of yourself.
I want to be fit and be an inspiration for someone.

So I am going to print this picture and hang it on my fridge and remember that I am working towards this!

I can do this! I have my mind set towards my goals!

January is really only 2 1/2 months away and I want to be 20 lbs less than I am now!

So I am head down and ready to charge this full on!

Weighing Wednesday

I was kinda excited, kinda nervous about stepping on the scale this morning. But it worked out in my favor.  So close to saying good bye to the 160s!!


164.4 last week and I was down 2.8 lbs this week to 161.6!! I was doing a happy dance this morning! 

I feel like a goddess for the moment being!

Someday I will be a goddess like you other Blog Mamas!! You all rock!

I didn't feel good last night and still don't today.  I am hoping it goes away here shortly! But I think I might go home at lunch for the day. Don't want anyone to get sick. (I still want to get my Jillian Michaels in for the day!)

Also, I mentioned it the other day about Holly's vlog for lazy curls! Well Darci over at Strongly Feminine did a vlog on her lazy curls! Make sure and check it out! Also Mama Laughlin did runner's poof updo on youtube. Check it out also!

I have to watch videos to get my hair done and cute and half the time it still looks like poop! 
It is a good think my best friend does hair! Only reason why I have cute hair on special occasions.

Oh Monday......

Well I must say that I love going to my dashboard and seeing how many followers I have!

I am at 19
and am tickled pink!

I love doing this blog.

We were gone for a few days and then the weekend came and I am terrible about doing this on the weekend.
It seems like I never have time for myself!

Well to recap since last Thursday, I mean Wednesday night!

I hurried home from work, my hubs had put the lasagna in the oven earlier and made some garlic cheese bread (I know the healthiest in world). And we hurried and ate as soon as we walked in the door. I still had to pack for three days and the throw all the kids stuff in their bags.

Typical me wait until the last minute to pack. It was chaotic getting out of our house to drive for 2 hours to my sisters' apartment to stay the night.  But it was fun!

We got up early the next morning and went to doctor appointments.

I don't know if I have mentioned about my youngest James having a helmet to reshape his head.  He got it in June and at our at last checkup 6 weeks ago, it had done wonderful! It went from  a 15 to a 5 in 4 months.  Which is wonderful! But he had to continue to wear it! And Thursday we went to his appointment and he got to take it off for good! So EXCITED!!

He loves it off except when he throws his tantrum and throws his head back and its on the hard floor or the end table or the rocking chair.....

Then we went to the mall and the oldest Jacer had multiple tantrums in multiple stores! It was so much fun!

After we were done in Columbia, we headed to Springfield and stayed with my cousin and then went to the Knox County Eagles Softball game.  They were in the final four for state. They got Fourth but couldn't be more prouder of them! They are exceptional group of girls and should be very proud of themselves.



Then we went and packed up and headed home! So we were only gone for 2 nights but I still had a ton of laundry when we got home.

On our way home we stop at the Lake of the Ozarks and ate at this little jewel

We eat there everytime we have been down there once we found it.  It is so yummy!

Saturday was a quiet day and catching up day with laundry and workouts.  I had missed 2 days of Jillian Michaels and was dreading going back but I did Saturday morning and even walked a mile with Monkey.

He loved the calves!

I also tried rockin' the ball cap look...


Sunday in the diet eating world for me was horrific....

I had waffles for breakfast and didn't stop at half when I was full,
I decided to go till I was miserable.

Then lunch I had half juicy burger, pasta salad, cupcake and ice cream.

Then we took family pics with my parents and sisters. Our photographer Waunita Cheatum did a wonderful job!! Absolutely love them!!



Just a few of them! I love them all! Going to be hard to choose!

So after pics, I decided to eat more roast, mashed potatoes, corn, homemade noodles, peach crisp and ice cream!

It was yummy! But the only plus side to eating all this was my portions are smaller than they use to be!

Today, I got up and did my best at being Jillian's Biotch and at lunch did the stairclimber for 5 minutes.

I know 5 minutes but that 5 minutes was a killer!
Then 30 minutes of lower body workouts!

I might whine during the class but it is worth it when I am all done.

Dreaded Weigh-In



One of my goals for October was not to look at the scale daily and lose 10 lbs.

I have failed at not looking at the scale daily by doing it everyday still.  I need to have my hubs hide the scale until Wednesday morning when it is time to weigh in for Weight Watchers and the big Team Challenge I am doing.

The other goal is high anyways but I know I can do this but not when the scale goes up! I was up this 1 lb.  I figured I would due to my TOM starting but it is still frustrating. I know I haven't ate the best but then I didn't really eat anything that was so yummy that I couldn't live without.

I am very techy and cannot figure out how to get this to rotate on my phone or on here!

I am determined to do this! I want to be the MILF that people talk about and that my hubs is proud of.  

You know when you step on the scale and lose you feel skinny that day and like you accomplished something.  

Then those times you step on the scale and gain you feel fat and unaccomplished.  I am having that kind of day but now with this challenge starting today, I want to make my team proud and win this challenge so I have got to kick it up some! 

I am doing 31 Days of Being Jillian's Biotch and today I completely hers.  I cussed her under my breath alot at 5:30 this morning. I did the easier steps on some of them because I am sore.  I am going to be out of town for a couple of days and kinda dread it because I am going to miss out on Jillian's workout.  She might miss me :) I am really going to have to get my butt in gear and start doing cardio at night.  I walked on the treadmill last night for 2 miles.  I need to kick it up and do even more! 

So this week, once I get back on Saturday, it is back to Jillian and I am going to get at least 30 minutes of cardio in a day!!!! I want this fat off of me. I want to have to wear a coat because I am cold not my fat to keep me warm! 

Another thing is I wish I didn't like fall food/treats so much!! But at least this morning when my MIL offered me a OATMEAL RAISIN COOKIE (my fave), I turned her down, now that is self control. I might of had 2 last night at her house when I pick the boys up! Then as I fixed me a bowl of ice cream last night and went to sit down and watch Sons of Anarchy with the hubs, I had like 4 bites and went and through it out due to the scene on the TV! Gotta love those Sons and their ways of revenge it made me lose my appetite!

Well here is to a new week and determination to lose this fat!

Working Mama

Work! UGGH!

I must say that I am truly blessed with the office I work for. 
I can take off when I need to and still get paid.
I don't have a certain amount of vacation time, sick leave that I have to accumulate.
They understand having sick kids, taking rents/in-laws to the doctor, going to your local high school softball teams State Game! 
GO LADY EAGLES!!!!
They are terrific.
There are days where I dread coming to work and that everyone there drives me crazy.
But I work at an office where we all get along
Yes we have our tiffs and taffs but we can move past them.
I stay busy and there is a little down time for things like writing my post for my blog!
Or catching up some of my favorite blogs.
So I can't complain too much at all! 

But I have my boys and I would love to stay home with them everyday
but to be honest I don't think I could!
I know, I know I sound like a terrible mother! 
But I need adult conversation/interaction!
Don't get me wrong I applaud every mother out there that stays home with their kids. 
I know it is a full time job also. 
I say I have two three full time jobs:
WIFE, MOM, LAW ASSISTANT
I love all of those titles!
Working mom
But let me tell you if I stayed at home, I would be huge!
That would be terrible for my diet!!
I would not be able to control myself, the hubs would think that he needed cooked lunch everyday!
I would try out a ton more pinterest recipes!

My house is clean with me working all day already.
(I stay up till 11 picking things up, doing laundry)
But that is ok! That is how this Mama likes it!

But if the Hubs would come home tonight and say "stay home",
I would do it! Just to give it a try!

Let's Rewind...

How was your weekend!

Mine was good! Raining but good! 

Friday night my bestie called and wanted us to go have a drink with her, so I got home from taking MIL to the doctor and told hubby I was taking him out to eat cuz I didn't want to cook.  Which worked out great, a guy we know picked up our tab! 

I had a chef's salad and a baked potato.  So I didn't do awful but not great either.  And two drinks. 

I also learned how to play KENO, very addicting and I won $10. 
Oh yeah! The Cardinals won!!! Can I get a holla holla!

Saturday - we showed our house to a guy, (FINGERS ARE CROSSED he takes it), my little monkey got his mullet cut off,

ate lunch out and I had another chef's salad.  Then it was home and major cleaning took place.  My MIL came and helped which is a blessing! She is a good cleaner and I wish I could just hire you to come to my house twice a month and do all the major stuff.

She did decide that it is very hard to do anything with this guy around:

 He would climb on everything and then go and unplug the sweeper, it was never ending.

Also I listen to our local high school softball game! And they are going to the Final Four BABY!!!! I am so happy for this group of girls and their coaches! I am hoping to go to the games this Friday and Saturday and show my EAGLE PRIDE!!! Let's go get 'em!!!

Sunday - we went to Church and did something I never thought I would do! 
I wore this


My hubby and my sister told me I looked good, so I wore it.  I was a little uncomfortable but I kept telling myself I looked like a MILF! BAHAHAHA! I know that I didn't but I will get there eventually. I must say that this was a comfortable outfit! But Mama Laughlin can pull it off much better than I can. She is totally rocking the MILF word. 

I did not do good on eating on Sunday,
not at all, 
I feel liked the failed.
But oh well no reason to ponder on it.

We had a going away lunch for my grandparents who go south for the winter to stay warm.
You know as they say the older you get the colder you get. 
I set the table and gave myself a smaller plate and that was a smart thing to do. I did not have seconds until dessert. It was apple salad and it is wonderful and Granma is leaving for the winter. That means no more apple salad until spring. 

Then I came home and hosted a Thirty-One Party. Which meant I had snack. I tried to make healthy snack but of course I had to make some Monkey Bread. It was delicious and of course I ate on it all afternoon.

You would of thought that I wouldn't of done that since I burnt my tongue on it and it still freakin' hurts. 

I was Jillian's Biotch (30 day shred) over the weekend and am proud that I got that in and last night hubby, Monkey and the dog and I went for a walk. 


Then it was absolutely my favorite time of night, snuggling time

Thinspiration Thursdays

Ok, one of the many and various reasons I am inspired to become healthy and thin and to stay in shape is because of this man....

My Handsome Hubby

Before anyone thinks it, he does ask me to lose weight or any of that source. 

I state him because I want to the sexy wife he can brag about; or if someone says look at that woman, he can say she's my wife; I want to be his MILF; I want to be healthy for him and not complain about being fat to him. I know he gets tired of listening to me about how much I hate being fat.  I could go on and on...

I just want to look good for him.  

So he is Thinspiration entry #1!

Do you feel pretty?

My husband will tell me I look pretty and what do I say back?
"No I don't." or  "I'm fat." Not Thank you or awww your sweet honey! I don't know how to take compliments. 

There are times when I think I look good but then later on I see someone or someone's outfit and think what was I thinking. 
Or better yet I see a picture of myself and think OMG!!!

I am not the most confident or secure person. I have been that confident person when I felt good about myself. (I was at my smallest and had a darker complexion). I know that the scale only says a number and wish that it wasn't part of what makes me better about myself. But it is! 

I am happy in my marriage but there are times when I am super jealous. What Mama Laughlin posted yesterday on her blog made me think that my insecurities are what make me a jealous wife when the husband has went out in the past.  I will hope that once I get the weight I feel good about and my body looks the way I feel good about .

Tomorrow is my weigh-in day. I am dreading it completely!! I had a bad weekend and to top that off it was a three day weekend with Columbus Day in there. I still did my 30 day shred workout though. Today I feel bloated but I will see the results in the morning of what that apple pie did to me.
